Vegetarian Chilli

Vegetarian Chilli This recipe makes 10 serves at 119 calories per serve
Ingredients
 ½ tbs olive oil
1 x onion
2 x cloves of garlic
2 x chilli’s- I like the little red hot ones mwah haaa ha.... if you’re a sooky la la & don’t like too much spice you could always leave them out I guess, but that kinda defeats the purpose of having chilli if you ask me
1 x red capsicum
3 x tin tomatoes
2 x tins of red kidney beans
2 x packets of taco seasoning mix
2 tins of water

Method
Sauté the garlic, onion & chilli
Add the tin tomatoes & water & leave to simmer for 30-40 mins
Add the seasoning mix
Drain & rinse the kidney beans & add to the pan. Simmer for 10mins & it’s done!

Serve with rice & extra light sour cream, instead of meat in your taco or as a topping for your baked potato... yum!
